Look up head cheese recipes. Then the whole head can be used.

My little sister got handed a roasted pigs tail once. Funny.

Jowls can be smoked too.
Hocks could probably make a good substitute for cheek. I'm hoping he meant jowl vs actual cheek . I can think of substitutes for cheek, but hey ,lets not divert too far from the recipe. (?)
