Add Rum.

WD

Well last year I made some cider using old fashioned apple juice and like yours it ended up dry. It does mellow out with time but I guess it depends on the type of apples they use whether the cider ends up sweet or dry/acid tasting.

That’s exactly what I suggested, but “somebody “ said, “No, we will acquire a taste for it.”

Hello Idaho! Good to here from you!

Typically I can’t keep hubby away from the free cider sampler. We were in a hurry to get in and out because there was no parking and we had truck and trailer along a busy road. I’m going to attempt apple cobbler this weekend. That’s pretty sugary. I will try to get a pic and let you all know how it turns out.

Msbeep is still swimming around. Just not much time for posting, I assume (grandkids). As a matter of fact, I got at least 50 “likes” from Msbeep today.

Simon is a different story. He had a lot of trees down from that big storm and that’s the last he’s posted. I have been searching obituaries going by what little information I have on him: first name, state, age, and a pic. I’ve not made a match. I know he was working on a book, so I am hoping that is what he is doing.

Hillbilly Prince is MIA also. Anyone know about his status?

Good evening WD,
The cobbler will be good I’m sure.
Glad to hear Msbeepbeep is ok.
I tried almost a week ago to PM Simon, but no answer.
Hillbilly Prince, I don’t know. He was posting fairly regular but that has been a while ago to.

Our peach tree really came through with about 90 pounds of some of the best tasting peaches I’ve had.
We had to give a bunch away. Ran out of canning supplies, and couldn’t get more in time. Froze a bunch, canned some, ate a bunch. No complaints, just need to stick up on supplies for next time.

Did ARC ever get chickens?

Ya. You can add a touch of sugar/sweetener. Honey even.

A good cider is a blend of apples. A deliberate blend.
It's alright with me if not the/a good blend just to drink a cup. But when winemaking and for hard cider , I ask the orchard what it is . And not pasteurized...
The orchard I've bought the most from has a good blend , from elsewhere! L.o.l..

Did you make homemade peach ice cream? We helped some friends can peaches one year. While Jenny and I canned, the guys cranked out the ice cream. Man was that good!

Nope... no chickens...

I found out chickens like Rum. :P

Well you guys have have made me think of some reasons why it is tart this year.

1. Weather- we had some late frosts and dry conditions this year. Maybe that altered the ratio of types used.

2. Maybe the operation has been passed down for some reason and they just don’t have the recipe perfected this year.

Idk.

I’m going to try the rum. BBIAM [emoji6]

No, we didn’t, but that does sound good. We did make a Peach pie that was good, a bit sweet, but I still ate 3/4 the pie. The peaches were tree ripe when picked, and very sweet. So couple days later made a peach crisp, super Rich, and too sweet for me. I ate some, but only a little.
The last couple of batches didn’t even need to be blanched, Skin pealed very easily With fingers.

The ice cream sounds great. I will try that. I Still need to finish the strawberry ice cream that we made a while back.
I had forgotten how good peaches are.

Thanks for sharing that.:icon_thumleft:

NO Rum ice cream... arrggg.

Something about milk and alcohol I could never swallow.

OMG! ARC did you know about this? Is there already a drink like this? Apple cider, a shot spiced rum and a sprinkle of cinnamon. If not, I am naming it the RCT.
Rum
Cinnamon

Strawberry ice cream is good stuff, too.

It’s about time for 90 minutes of entertainment. I will tell you all a story tomorrow. Good night, mateys. :piratehand:

Well I went into the city today, first time in the downtown and in a store for 6 months.
Got some treats, a 4 shot latte, ate a sandwich, huge cinnamon bun.
Then I trucked over to the lrg hardware got 30 sheets of 3/8th plywood save a cool $200 from my local lumber yard.
Picked up 15 gallons of pine tar and linseed oils, ordered blow in insulation in the attic.
Watched a maniac just about take 8 vehicles out passing on a blind curve.
Got home safe and sound a kind of a strange day actually-kind of surreal.

C U n am.
