Re: What's For Dinner?

Tonight I'm havin' homemade chicken and dumplins, triple succotash, and stove top stuffing.
For desert, I'm going to experiment and try to make them deep fried oreo's and some hot chocolate.

I'll let y'all know how that works out.... :o
I understand that it is all about the batter...

Best,
Scott

PS. Don't forget to have black-eyed peas and greens for New Years!

UPDATE!
Just found a can of Jellied cranberry sauce. Not sure how old it is, but it isn't swollen!
That makes it fair game. :tongue3:

Re: What's For Dinner?

Conch Ceviche and Conch Chowder

The Basic Ceviche Recipe consists of these staple ingredients:

Lime/Lemon/juice
chopped onion
chopped chili peppers
white fish
white vinegar (2-2 tblespoons)

Way too many conch chowder recipies. Ours is basically a Manhattan style clam chowder but we use the conch meat in place of the clams. Conch is rather tough and has to be tenderized. Several ways to do it. I use a meat tenderizing hammer and pound it till it is flat. ( Slice the thick parts of the conch to make them a bit thinner before pounding). You can also pressure cook the conch to tenderize.
Great flavors.

Re: What's For Dinner?

My, it's late...
Had several locksmith jobs on this first day of the year.
Don't rightly know what I'm gonna have for dinner,
(as he looks over a half eaten package of slick, flourescent colored balogna :tongue3:) (little voice saying: DON'T DO IT!!! )
but I just finished bakin' a chocolate cake for desert. It's got the sprinkles on it with frosting an all...wish I had some ice cream....guess a big glass of ice cold milk will do.

Hope everyone is gonna have as awesome of a new year as me!

Best wishes all,
Scott

Tonight our son and daughter are with family so my wife and I are going out for Chinese take out. I'm having the tai chien chicken, and the wife is having trio in garlic sauce and we ordered 4 egg rolls.

The chili mac sounds really good Scott, I think we are doing chili later in the week.

Well, the big storm has closed schools, cancelled flights out of Atlanta and
created havoc for driving.

Re: What's For Dinner?

AU, that's a darn good looking cake .
I really like chocolate cake with peanut butter icing.
Tonight we'll have fried porkchops, and frenchfries.
The snow is suppose to hit here tomorrow afternoon, so maybe I'll
get to the market in the morning and get stuff for a pot of chili.
I think soups are always the best during a snow storm.
Oh yeah and maybe a chocolate cake mix.

I'm gettin' good ideas for dinner. Cooking for one is mostly boring.

Tonight I'm having pig in a blanket and home fries.
Oh, it's good an all...but it's alone.
