Whats For Dinner?

Tonight at our house it was a smelt fry. Had a pasta dish with it and plenty of malt vinegar. Iā€™m not showing any pics if my tiny fish. Iā€™ve seen to many big, nice fish on these forums. Mine look stunted. But, wow! Do I like them every once in a while.
People always tell me ā€œyouā€™re eating the bait!ā€šŸŸ
 

Tonight is going to be tacos ā€œel Norteā€.
Not even close to authentic. Hamburger, cream of mushroom soup, cumin, onions and peppers in slow cooker. Serve on tortillas with other toppings: cilantro, sour cream, crema, etc. I love authentic tacos: Al pastor and lengua are favorites, but these are good for a change. Sort of a casserole on a tortilla. Iā€™m heading out to look for shedded deer antlers. They are treasure to me. I scrimshaw some, make knife handles, cribbage boards etc.

Tuna & noodles with toasted breadcrumbs.

Snowed all day. Cabin fever kicking in. I made my version of Grandma-style pizza. Ham, sausage & onion. Not too bad. If youā€™ve never had it ; crisp outer crust but not crispy all the way through.

Saturday I was feeling better and decided to try a new recipe that I had been thinking of.

1 lb ground hamburger
1/2 lb ground pork sausage
1 cup cooked rice
1 large egg
2 potatoes, peeled and sliced approx. 1/8 inch thick
1 8 oz bag of shredded "Fiesta" cheese
Secret mix of spices and seasonings
No salt or pepper until it's on your plate :thumbsup:

Mix meat, rice, egg and secret spices by hand, as for meatloaf.
Form mixture into billiard ball sized balls and place on baking dish.
(Or, in my case, a campfire pan lined with heavy Aluminum foil. Quick clean-up, Dig?)

Take the sliced potatoes and lean them over each ball.

Sprinkle 3/4 of the cheese over the balls and potatoes.

(I also sprinkled some paprika over the cheese.....)

Place into preheated oven of 350 degrees.
Bake for approx 45 minutes.
After removing from oven, sprinkle the remaining cheese.

Plate up with your favorite sides and condiment!

For me, it was spinach and hot pickled cauliflower and cucumber.

Think I'll call it:
"Porcupine meatballs in the Potato Patch."

i was feeling under the weather....

As I went to my Cat Scan on Friday,
Not knowing what to expect.........

I felt nausea and declined shooting with Michael.....
Citing nausea.....


Perhaps another time?

Apparently, the results of my CAT Scan may take several days.
However, that will not deter my long held mien.
Shouldn't we all continue on with our beliefs?

I have been in communication with my Sister.....
She will be the first to know of any medical situation........
And, of course, Michael......
