Saturday I was feeling better and decided to try a new recipe that I had been thinking of.

1 lb ground hamburger
1/2 lb ground pork sausage
1 cup cooked rice
1 large egg
2 potatoes, peeled and sliced approx. 1/8 inch thick
1 8 oz bag of shredded "Fiesta" cheese
Secret mix of spices and seasonings
No salt or pepper until it's on your plate
Mix meat, rice, egg and secret spices by hand, as for meatloaf.
Form mixture into billiard ball sized balls and place on baking dish.
(Or, in my case, a campfire pan lined with heavy Aluminum foil. Quick clean-up, Dig?)
Take the sliced potatoes and lean them over each ball.
Sprinkle 3/4 of the cheese over the balls and potatoes.
(I also sprinkled some paprika over the cheese.....)
Place into preheated oven of 350 degrees.
Bake for approx 45 minutes.
After removing from oven, sprinkle the remaining cheese.
Plate up with your favorite sides and condiment!
For me, it was spinach and hot pickled cauliflower and cucumber.
Think I'll call it:
"Porcupine meatballs in the Potato Patch."
