When they ripen up, melted butter, salt and pepper. The best squash going and very few have eaten them.
In our circle it's on the top rung most years.
Unripened it's like you said boiled water taste.
The Kabocha squash has to be ripened/cured/aged what ever term fits best.
Lift them up the green will be heavier, knock on them if they have a lighter hollow sound then they are good.
Deep orange meat, if yellow then not ripe.
