Folks,

Back to left over turkey, stuffing and cranberry sauce for supper.

I tracked down a recipe for roasted carrots which will be a side dish tonight.

I skipped the pomegranate seeds because we don't have any. we do have the molasses though but just use balsamic vinegar instead if you want to try it. Also I leave the skins on the garlic so it doesn't burn.

Roasted Carrot Salad

Roasted carrots with a sweet, tangy sauce, rosemary and garlic.

  • Prep Time: 10 minutes
  • Cook Time: 1 hour
  • Total Time: 1 hour 10 minutes
  • Yield: 4

Ingredients


  • 1 1/2 pounds carrots, washed well and dried
  • 1 tablespoon olive oil, for roasting carrots
  • 1 lemon, squeezed
  • 2 tablespoons pomegranate molasses
  • 1 tablespoon olive oil
  • 1 tablespoon brown sugar
  • 1 and 1/2 teaspoons salt
  • 7 cloves garlic
  • A few sprigs of fresh rosemary
  • Pomegranate seeds, for garnish

Instructions


  1. Preheat oven to 400F. Line a baking pan with parchment paper and place the carrots on it. Drizzle olive oil over it. Roast for 30 minutes until partly tender.
  2. Meanwhile prepare the sauce by mixing lemon juice, olive oil, salt, pomegranate molasses and brown sugar.
  3. Remove carrots from oven, transfer into a casserole pan and pour over the sauce. Shake the pan so that all carrots are coated with the sauce. Toss in the garlic and rosemary. And roast for another 15-20 minutes.
  4. You can either servet hem as they are or chop them roughly and combine with the sauce remaining in the pan.
  5. Toss in some pomegranate seeds and serve.

Well tonight was the last evening of turkey leftovers. The rest got frozen and we'll be making some casseroles later this winter.

Tomorrow night we'll be having some stuffed pork roast.

As y'all know, I like to make my own sushi.

I happened to see this and bought one on ebay and it should arrive soon.



I'm not sure if it's the same brand, but I got it for under $5 with free shipping from China.

Can't wait to try it out when I get it!

When I came in to work today, I saw that we had received about 30 new 24VDC batteries for our pallet jacks. :hello2:
I'm not sure how many jacks and forklifts we have, but I know that it is more than 100 altogether....

Since the day I was hired, I have been in charge of watering and servicing our compliment of pallet jack batteries AND our 36VDC Forklift batteries.
Friends, just like car batteries and most any batteries, they don't last forever.

So, starting next week, I will number each new battery, record the serial numbers and change them out on the jacks that have the oldest batteries.
I know that I've got numbering stencils around here somewhere.....:icon_scratch:

And, I've got a broken jack riser to work in sometime soon.
Those selector folks tear up the equipment ALMOST as fast as I can fix 'em!

For what it's worth I've been doing admin for about 6 years on the Canadian detecting forum. Luckily we've got a pretty good group of
people but there are times when it does get a bit trying. Just comes with the territory.

I really don't see any difficulties in the group.
The rules will be "clear cut," and there will always be communication between us for any issues.

I am not really that religious, but I have volunteered and served meals at a local Christian Organization several times.
I have Helped build homes for Vets with "Habitat For Humanity."
I volunteer at the local Animal shelter.
And I will do more in the coming year....

You notice that I never say, "Addiction."
I have never been,"Addicted" to anything except air, food and water.
I have and always will be stronger than any other force that I have encountered.
Is sleep an addiction?
Obviously, I am now in control of that also....

And perhaps I'd analyze him in the same measure.....
