Just sliced up a couple of pounds of red cabbage massaged in some kosher salt. I'll let it set covered for an hour or 2 to produce enough juice to transfer to a mason jar for fermenting. Should be enjoying some tasty sauerkraut in a couple of weeks.

Wow...what a beautiful color. That must be bionic cabbage !! Never seen it that bright of a purple color.

It's produced locally I was told once it fermented the color would turn more pinkish and not be so intense.

Here it is in jars....1 26oz and 1 8oz and that's only about 1/2 of a $2.00 cabbage. They charge a fortune for the commercial live sauerkraut.
