Elk meat is the best. Beats beef and white tail.
I like home made hamburgers. The best ones I ever had came from a Sonics in Aurora. But the other places around here are not good.

white does not have much of a different taste than the Roe deer you have in Germany. Elk is like Red deer.
Roe or really any other deer I like to mix with moose liver fat. I will take moose liver fat and boil it in a large pot, let it cool off all the way and then work that into the ground (hack) meat with my hands, also mixing my spices under with it, then make the links and smoke them.
wild hog I will mix with beef fat using the safe method.
I do not like just using fat only, boiled and strained until it turns into that clear gel. I will use about a kilogram per 30 kilograms of lean ground.
