Good evening guys and gals! Hope the first weekend of summer was pleasant, and even profitable.
Lets start tonight with a simple Bicardi Oakheart spiced rum, ginger ale, and slice of lime......piled high with ice
Tonight we are going to have the famous Grouper Rubin from the Islamorada Fish Co. ( one of the other 3 favorite eating places in So. Fla.)
You prepare a lg. fillet of grouper, either fried, or grilled, or blackened. On two slices of thick cut rye bread pile, swiss cheese, sauerkraut, the fillet, and thousand island dressing, put in pannini press,( or the grill, weighted down with foil wrapped brick), until cheese melts. Serve with lg. garlic dill pickle, and potato salad. Truly one of the best sandwiches you will ever have. It's even better in the Keys watching the sun set!
