Actually I just read that if you can get fresh off the boat it's ok To let the juice cook it....otherwise , if farmed you have to be careful of bacteria so you should blanch it prior to cooking in juice!

I only buy or eat the fresh stuff.

There's a similar way of preparing fish or shellfish called escabeche.....do a search and the recipes should pop up.....
I see we have a pretty good assortment of foodies on the thread......lol...

Scott, remember wherever you land, friends and support are only a key stroke away, might be a nation away, but will always be there.

Squig, I have never had a problem with farm raised seafood, there is none up here. I get all mine from a friend who is in the business. It comes from Fla. and La. This is where we spend the winter ice fishing season filleting yellow perch that we buy from the fisherman. This past year, we processed 2 tons of perch fillets, and those make for long days!
