Good evening, and hope you had a good long weekend, The Autumn season has just been dumped on us here in the North Country, with frost warnings out for Thursday night....time marches on, and time to get some things done.....Gary

Yeah.....a bit cool today here also....no frost warnings yet but the days are getting cooler.....I'm thinking of firing up the smoker in the not to distant future and hot smoking some mackeral fillets...

Ditto here... we spent Sunday putting out the Duck blinds, and the goose season opened today. Bought a 25 lb bag of charcoal today, and am ready to refresh the larder with some goodies. Have a good friend who is a charter Capt on the Lake, and he has some Lake Trout fillets for me to smoke.....need to get up to camp in Plainfield, I hear that the Chanterelles are abundant, and I hope I don't miss getting some.

This is for you, and Barb,...tonight I had for the first time a broiled Portobello stuffed mushroom cap, and I was blown out of my seat...I will definatly have this form ao protein again...but rest assured I will not give up meat! I used a recipe from "Food" mag for a Tuscan stuffed entre', sun dried tomatos, garlic, oregano, and Romano cheese,( didn't follow the recipe exactly, but I never do).....later Gary

Yeah the portobello mushrooms are kind of special.....you can also leave them whole and marinate and grill them up and use as a substitute for hamburger in a burger....they have a meaty texture for some reason or other.

Thanks GIB, but still have the hunting season, and holidays to keep me busy here in the North Country. But hope that the invitation remains open for March, when I head to Cooper City, and Islamorada.....perhaps a cold one somewhere:occasion14: Gary
 

Back from the bush and I hope everyone had a good weekend. No detecting or rock hunting this weekend as the weather was not being cooperative to say the least. We did manage to create a nice tarp village and have our annual fish fry with our friends and family though. Wow, what a thunder storm we had on Thursday, haven't seen a light show like that in years. The leaves are turning fast an I feel that the frost will not be too far off up here with the temperature going down to 4 later tonight. In about another few weeks I'll be loading up the smoker with the annual Whitefish harvest and will be doing a bunch of canning as well. Here's a picture of previous smoked goodness from natures bounty that is the Fall up here in Ontario. Smoked pepper, smoked Hawaiian sea salt, brown sugar and pineapple.

Wish I was there, nice picture of our winter larder! We missed that T-storm thatn you got, but a couple others have rumbled through since then. Looks like the corner has been turned, and fall is descending.....ah....red meat(sorry Squig).....Gary

Do you season or marinade the fish at all before smoking them Bill? The first time I tried to smoke a fish I couldn't keep the sucker lit with my Zippo.
