Good Friday afternoon, and hope the week has been a good one....Temps. are down, sun is out, the North wind is blowing on the Lake, and the geese are flying.....But summer is still here. As promised a week end menu for those inclined to enjoy all that is around you. Prepare early and enjoy later while watching the sunset....
Let's start with a very simple and comforting summer libation, the Gin and tonic, your choice of gin, or if you prefer you can use vodka. Ice, a slice of lime, and good tonic water. By the way, tonic water, and it,s quinine relieve leg and foot cramps, see, a medicinal use.
Dinner will start with a Caesar salad...Cut up Romaine lettuce, crunchy croutons, Backbacon's dressing, with plenty of anchoives!
In some heavy duty alum. foil, wrap some walleye fillets, top with onion slices, butter, s-p, and parsley. Place in oven,( 400 degrees), or on a hot grill, and cook for approx. 15 mins, until fish flakes, don't overcook!
This will be served with fresh green beans, and new red potato's cooked in milk( instead of water). Cut beans into 2-3 in, pcs., and potatos 3/4 in chunks, add s-p, cook at simmer until fork tender, and add some bacon bits at the end.
If you still have room, blueberries, and wild raspberries over vanilla ice cream.
