Evening Folks,

My unexpected journey brought me close to la casa de mi padres and I was able to grab some pics to share with you. I built this garden over 14 years ago when I was a college student hippie. It has evolved much since then. I once read that true Zen gardens change with the time as the earth is an ever changing thing. Maybe Pat-Tekker-Cat can chime in for us. Anyhow, the Iron Garden was added into it a few years ago. I hope you all enjoy them.

Hey, hope you all had a great weekend, just got back to shore after a 6 hour fishing marathon. boated 2 3.5 lb. salmon, not the biggest, but perfect eating size. Was hoping for a 5 + lb. laker to put in the smoker, maybe tomorrow night. Felt good to be back on the lake in the boat, and not having it fill with rain water. maybe now that the boat is in and my friends from Maine are here for two more weeks, we'll have some relaxing,( if you call 6 hrs. of trolling relaxing), trips out on the water, the freezer is starting to show some holes! Going to get the smoker out in the morning, and after finishing a couple lawns, get some of last years duck breasts on. I'll let you know how they turn out.........Gary
 

GMD, as you surely know a couple three days of steady weather would help the fishing. At least you got the skunk out of the boat!
Heres hoping you fill the boat ,and freezer too, (bellies first!).

So much for calm, steady weather, storms all day, not a lot of rain but 2-3 ft. waves on the water, and trolling was tough, and unproductive.

But I broke the smoker out, and have a couple small lake trout fillets marinating tonight, from my friend who owns the best bait shop in the area.

Marinade for smoking fish......
1 qt. water
1 c. salt,( non-iodized)
1/2 c. brown sugar
1 sm. onion, cut into 6 slices
2-3 cloves garlic, cut into slivers
2 lemon wedges, squeeze juice, and add all
1/2 c. Vt. maple syrup,( opt)

add marinade to fish fillets into a glass, or ceramic container. Let sit for at least 4 hours, up to overnight in the fridge. Rinse, and pat dry. Let air dry 2-3 hours before adding to smoker. Smoke 3-4 hours at 160-180 degrees, until nicely colored and easily flakes. I didn't mention before, but leave the skin on the fillets, and put that side down in your smoker. Serve with old fashioned soda crackers, and your favorite summer beverage

This is the mixture that I like, but there are many others, also just came across a Cuban dry rub mix, and want to try when I can. More later...........Gary

yum! toss a piece of cheese in there a little while,oooo more yum.
goofed around a while ago with a pork tenderloin,(no pork butt at time) 1 and a quarter pound piece in a zip lock bag with 1 and a half table spoons of morton tenderquick a tablespoon of brown sugar and a couple drops of liquid smoke. turned it daily in fridge for 10 days then baked at 250 till 170 internal reached(took 130 minutes). then cooled briefly before back to fridge.

close to a mild Canadian bacon sort of.

need to dig smoker out of shed. shame on me.
