Y'all Come Casserole
Great for a large crowd.....serves 14.
2 lbs. ground beef
2 Tbs. butter
1 onion chopped
1 medium green pepper, diced or chopped
1 lrg pkg wide egg noodles, cooked
15 oz canned peas with juice
15 oz can of corn with juice
1 small can pimento's, drained
1 medium can diced tomatoes
1 small can tamales, cut into pieces
1/2 lb. Colby cheese, grated
1 can whole pitted olives, drained and sliced
2 cans cream of mushroom soup
1 pint half and half
1 tsp paprika
2 tsp chili powder
2 tsp season all
Potato chips
Brown ground beef and drain off fat - set aside. Saute onion and green pepper in butter for 5 minutes. set aside. Cook noodles as directed and drain. Place all ingredient, except potato chips in a large baking dish or roasting pan and mix well. Bake at 325 for approximately 1 hour. Crush enough potato chips to cover the top of casserole, bake an additional 10 minutes. Let sit for 15 minutes before serving.
