U'mmmm good ;D
first, mince up some garlic and onion and mix it together with some olive oil, then
Take a Deer tenderloin or loin and marinate with it in a covered bowl for at least 24 hrs.
After marinating, cook the venison slow as to not creating any hard spots on it, to your liking [ if it gets hard spots, cut them off and discard] . One good size loin will stuff about 50 halves of jalepenos.

OK now we take the peppers and slice in half and clean them, removing the seeds. While the venison is cooking, on the "grill!" with charcoal or wood.

about like making tuna or chicken salad

It is best to do all this with a food processor, I have a small one that works great.
Cut the venison up in chunks and put it in processor chop it up fairly fine, set aside.

3-4 boiled eggs, process fine
lettuce, about 2-3 cups and process fine [ adds a fabulous flavor] about 3/4 cup after processing.
Sweet pickle relish, to your liking. I like about a cup.
add all this to a bowl including the venison adding enough mayonnaise to get the mixture right, and stir up until mixed good.
You can add your favorite spices to this. I like to add Greek season to mine.

Take your salad and stuff it into the jalepenos.
And Walaa, you got it

Hint, If you want to take some of the heat out of the peppers. bring a pot of water to a boil and drop the peppers in it for about 20 - 30 seconds and remove and run cold water over them. It removes a lot of oil from the peppers and cools them down a lot without losing the flavor.

I hope I didn't leave any thing out. Good luck and happy eating.

Sounds excellent to me too! I've had stuffed jalepenos, but never tried it with meat. The venison sounds like an excellent match. :)

Sounds excellent....another thing to try with the loin...to bad deer aren't just one big loin, two just aren't enough, LOL Can't wait to try this one. Thanks.

Gotta wait till deer season, no loin left from last year, goes fast around here.... Will try the first one I get though.

No offense but it seems a waste to use the loins if you are going to "grind" it. Why not shoulder and save the best cuts to fly solo? I love venison and this sounds like a great idea! P.S. anybody ever tried tuna salad stuffed jalapenos? YUM!

You're write, but the inners are normally so small I forget about them. I normally use them on skewers with peppers & onions or steak subs. It's all go.

Sounds absolutely delicious....I wouldn;t waste the inner tenderloins by grinding them up, for they are they most tender and delicious cut of meat on a deer...the larger loins would work though and can;t wait to try it. I got a package or two or stew meat left from last years deer, may try that in the recipe. Bow season here now and firearms opens the end of the month.... :)
Thanks for passing along an excellent recipe!!!!!

Y'all ought to have your deer by now. I am making this tomorrow. Got it marinating. :D
