I use a 2 gallon stock pot to start. Stuff some water in it and add 1 small chopped onion. Put in about 6 chicken thighs, boneless or otherwise and turn on da heat for about 2-3 hours till the chicken starts to come apart.
Turn it off, let the chicken cool enough to pull the meat off it and get rid of the bones, if you had the thighs with them.
Start it back up and add in this order: 2 large potatoes, diced, after they cook maybe 20 minutes, add 2 cans of whole kernel corn, and 2 cans of carrot slices, or whole baby fresh carrots. Cook about 20 minutes for the juices to mix. Add some Minute Rice, let it soak about 10 minutes, and you're done.
Add salt and pepper to taste. Quickly HIDE the soup or people will come from miles around to steal it!
