1 lb ground sirloin beef

1 pkg taco seasoning

1 pkg Ranch dressing mix

1 can whole kernel corn

1 can chopped green chillies (hot or medium)

1 12 oz can chili beans

1 12 oz kidney beans

1 can diced rotel tomatoes and chillies

1 can diced stewed tomatoes

2 cans water (24 oz)

Brown the beef and add taco seasoning and Ranch dressing mix while simmering. Add remaining ingredient to a large soup/chili pot. Bring this concoction to a slow boil, Add salt and pepper to taste. Reduce heat and simmer for 30 minutes.

This has the same properties as a good chili, in that it gets better the more times you re-heat.

This recipe was given to me by a friend who owns the "The Olde World Bakery"...she substitutes yellow hominy in place of the corn, adds more cans of beans (black beans, white beans, pinto beans).

Hint - For a more heartier taste, add a dollop of sour cream to the individual bowl...that is if you like sour cream. I love it in this soup.

Serve with tortilla chips.

Very simple and very good. Thanks for posting. I like to add a can of black beans, too. Pretty much anything goes.
 

This looks so good but my hubby would never eat it because of the beans. I just don't understand the man. He loves my red beans and rice but refuses to eat white beans or chili with beans. I may have to make it for myself. Thank you for the recipe!

Make him a peanut butter and jelly sandwich and make the Taco soup for yourself... :wink:
 

I made a big pot 2 weeks ago, I froze the rest. Took 1 container to my brother and another to my son. With the cold temps of today, I took a container out of the freezer, thawed at room, it's heating up right now.

Also, if you are adding more cans of beans than the original recipe calls for, then it is best to use 2 pks of taco seasoning mix and 2 pks of the ranch dressing mix.
