Yes, i grew up on perogies...homemade even :)

I live in southern California so I have come up with my own recipe. Just cook the periogies like normal except you add, Julian cut green and red peepers with fresh mushrooms and leak. After frying all together add a generous helping of black pepper or Chalula hot sauce..... hhmmmmmm I'm already getting hungry...

Kurwa mac! Great, now I have to give away the secret recipe for my pierogi filling!

OK here you go....
1. Boil some kielbasa, peel off the skin, chop it up fine

2. Chop up some sauerkraut finer than how it comes out of the jar ( I recommend Polish-Style sauerkraut, it's sweeter and
not as acidic and it has caraway seeds)

3. Finely chop some onions and fresh mushrooms....sautee them to cook some of the liquid out of them then drain them

4. Get some Krajanka, or farmer's cheese. If you can't find that, press the liquid from large-curd cottage cheese, which is basicall all that farmer's cheese is.

5. Mix it all together. There's really no set quantities in the recipe just put it together so that it tastes good to you and holds together as a filling. Now get a pot of salted water boiling.

6. Now roll out your dough. Cut out circles with a glass and roll it out just a little thinner, put a tablespoon of the filling on it, then crimp it with a fork.

7. Drop your pierogie a few at a time into the pot. They will sink, then they will float. After they float to the top, let them boil for about another minute or two then they are done. Serve with sour cream.

8. As an option, try frying some boiled pierogi in butter.................mmmmm!!!!!

Now since there's no pierogi in Iraq my mouth is watering and I'm going nuts for some Polish food. Good thing I'm going on leave in 2 days!

Thanks Pegleglooker and Sgtski for the perogi recipes....both sound tasty!
