Always run sensitivity as high as you can, when its too high the machine will start flaking out, producing false/spurious alerts, then you can turn it down as needed.
I often hunt with full sensitivity at clean sites.
The exception is tot lots, where you typically don't need all that much depth, and all the metal around makes it unpractical to hunt on high.
