Gypsy's Merry Cherry Christmas Cookies (Sugar-free: almost!)
I took Gypsyheart's "Merry Cherry Christmas Cookies" recipe and converted it to a Sugar-Free recipe. I also topped the cookies with a butter recipe rather than the chocolate kisses. Unfortunately, Splenda doesn't make a good butter icing; it does make a gooey glob though that's probably good for something, As a result, that's why I say it's "Sugar-free; almost".
Servings: 20
Preparation Time: 20 minutes
Start to finish: 1 hour
Notes: - Preheat oven to 350 degrees.
- Icing can be seperated and red and green food coloring added for Christmas colors.
* Baking powder and baking soda are a necessity when baking with Splenda.
- Splenda does not make a good butter icing.

1 Cuo Splenda
1 Cup Butter, Softened
3 Teaspoons Maraschino cherry juice
1/2 Teaspoon Almond extract
3 Cups All-purpose flour
2 Tablespoons Baking powder
1 Tablespoon Baking soda
10 Ounces Maraschino cherries, Diced
1 Cup Powdered sugar
1/4 Cup Butter, Melted
1/2 Teaspoon Vanilla
1/2 Teaspoon Cherry flavoring
2 Teaspoons Milk
1. Preheat oven to 350 degrees.
2. Mix together 1 cup Splenda, 1 cup softened butter, cherry juice, and almond extract.
3. Add flour and cherries and mix well.
4. Roll into 2-inch balls.
5. Bake 8-9 minutes on ungreased cookie sheet.
6. Remove and allow to cool thouroughly; spread icing evenly on cookies.
7. ICING: Mix 1 cup Powdered sugar, 1/4 cup melted butter, vanilla, cherry flavoring, and milk. Add milk slowly as the icing will be runny if too much is added.
