Green Beans and Bacon are simmering

Picked my first batch of green beans and they have been simmering all day .....cant wait til supper

Pick ,wash and snip ends off about two pounds of beans
Place in large pot and cover with water and 1 tsp salt.
Cook on high until they boil....when they have reduced the water to about half...lower temp to simmer

Add two tablespoons of bacon grease or a few pieces of cooked thick sliced bacon with the beans . Some people like to use smoked ham hock but we dont like the taste. Cover and
let beans simmer at least three hours.....watch that they dont simmer dry. I even like to simmer longer....

Now these are good just like this or you can make this dressing to cover them.

4 slices bacon, diced
1/4 cup finely chopped onion
1/2 teaspoon salt
1 teaspoon tarragon vinegar or other vinegar
dash pepper
4 cups hot cooked green beans, drained

Sauté diced bacon in a skillet until browned. Remove from skillet and set aside. To bacon fat, add the chopped onion; sauté until onion is tender. Add the salt, vinegar, pepper, and hot cooked green beans. Toss and heat through. Transfer to a serving dish and top with reserved bacon.
 

Oh my that smells i mean sounds good.Here in california we use cactus and green beans mmm.
 

I do that with some potatoes and have a soup or sorts. Green beans, ham or ham hock, and potatoes.....mmmmmmmmm

Dang, just read this post...if I'd seen it Monday you would have had to set another place at the table! :P
 

I can practically smell those!! yummmmm Grandma picked me some green beans when I was at her house yesterday but they never made it to the stove at home! :-\
 

Thanks for the suggestion.

I had a leftover ham bone in the fridge with a little meat on it, so I threw some green beans in the pot, the ham, a little bacon, and an onion. Good stuff.
