I know some of you do not like grits...but fried grits is one of my favorites.

Cook up batch of grits according to instructions on the box. Cook extra to be sure you have enough to make fried grits the next morning.

The extra, while still hot pour into a loaf pan (glass or metal). Cool, cover and place in frig.

The next morn, get out your skillet, place several pats of butter (you can use bacon grease) slice the grits like you would slice Spam (canned ham). Fry up till golden brown. Add pat of butter and syrup and enjoy!!

There is little or no difference between fried corn meal mush and fried grits, except maybe the actual grind.

Thats our weekend breakfast when in the mountain cabin...

Big black well seasoned cast iron skillet filled with fried mush, rasher of bacon and a cup of black coffee...Mmmmmmmmmmmmm

Almost forgot, dust with flour then fry.

Not to take away from this delicious treat ,which I personally love...but do you know if you sprinkle dried grits around where there are ants it kills them....They eat them and they expand inside the ant killing them.... :P

My mom used to do this with leftover Cream of Wheat. Sometimes she'd roll the slice in a flour (with pepper) thing, then fry it up in the bacon grease.

Brings back memories...
