This armorial or crest is on a George III sterling silver salver made in 1787 in London by Hannam and Crouch, a well-known maker specializing in trays and salvers. It's clearly hallmarked so id'ing it was easy.
But I'm not sure what to call the armorial or crest on it, never mind how to figure out what family it represents. It bears the motto "sapere aude" - which means something like "dare to be wise" which seems to be associated with more than one family.
Is it called an armorial or crest? Is it surrounded by a cartouche? Perhaps it's an impalement (?) of two families?
I apologize for the quality of the photo; it's actually not that easy to make out its details in person.
