Electrolysis and Flaking

I've recently discovered electrolysis and am very impressed by how well it works. I've been able to clean some items up to (in my opinion) museum quality. For permanent preservation, I give them a nice soak in paraffin wax. However, some items I have trouble with. Every few hours I take the item out and brush them (not too vigorously) with a toothbrush and water. I never use soap as it's acidic. Often times, little bits of iron flake off sort of like phyllo dough. Is there something that I'm doing wrong? This is the car battery charger I'm using. It has both manual and automatic settings, but I always use manual.

Rust shouldn't flake off if the electrolysis process is complete. Your items need more time in the electrolysis bucket.
