The girls picked alot of blueberries this summer and froze them. So today we decided to start baking cookies for Christmas baskets. These are extremely easy to make...and are really tasty.
Have the third batch in oven right now and our whole house smells like a Blueberry muffin! :P :P
BLUEBERRY DROP COOKIES
1/2 c. shortening
1 c. sugar
1 egg, well beaten
1 tsp. lemon extract
1/2 c. milk
2 1/2 c. flour
1/2 tsp. salt
2 1/2 tsp. baking powder
1 c. blueberries
Cream shortening and sugar. Add egg and beat well. Mix milk and lemon extract. Then add alternately with dry ingredients....previously stirred together. Then lastly gently add berries. Drop by teaspoon onto greased cookie sheets. Bake at 325 degrees for 12 to 15 minutes. You could also use almond flavoring instead of lemon extract and it's fabulous.
