Deer season is here I thought that this would be a good time to post an easy but very good venison recipe. I hope you enjoy....Steve
5 lbs ground venison (important do not add any fat or suet to the meat)
5 teaspoons Morton Tenderquick
1 tablespoon black pepper
2 teaspoons Garlic Powder
1/2 teaspoon Cardaman seed
1 teaspoon allspice
Grind the above spices together using a mortal and pestle.
After grinding to a powder, mix with the 5lbs venison. Add 2 teaspoons liquid smoke and two teaspoons mustard seed.
Cover, put into refrigerator for 4 days.
Take out once a day and mix thoroughly
on the 5th day make into logs one and a half inches thick by twelve inches long.
Put in smoker and smoke for 8hrs.
An oven can also be used but in my opinion you get much better flavor from the smoker. When done smoking, freeze what you don't plan on eating in the near future....Steve
