Your token looks pretty old to me but, I'm no expert either. My guess is the token is from late 1800's to early 1900's. Perhaps this is the man who ran the bar. More "digging" may provide the answer.:occasion14:

Couldn't find Wm. Sorgett listed as a saloon. There is a listing for Sorgatt & Mielke as a hotel in Hawks in 1905, and Wm. Sorget is listed in Hawks in 1907 & 1911 as lumber. Your token is very likely the same man. This is the first trade token known from Hawks.
