One of my favorites to make and I consider to be the perfect dish as an Hors d'œuvre, side dish, lunch, and even snack are Spinach Balls. Easy to make and they disappear in no time, like magic. I normally make a ton of them and keep frozen for the right occasion, but this will get you started until you try them.
Careful, they are addictive
Ingredients
* 1 (10 ounce) packages frozen chopped spinach, thawed and drained
* 1 Box Cornbread stuffing or 2 cups Italian-style seasoned bread crumbs
* 1 package feta cheese or cubed Swiss Even both!!
* 1 large Spanish, Sweet, or Vadalia Onion chopped fine
* 2 eggs, lightly beaten
* salt and pepper to taste
Directions
1- In a medium bowl mix all of the above together well by hand
2- Place on a cookie sheet in 1 inch balls
3- Freeze for about 1 hour and transfer into zip lock bags
Cooking
1- Preheat oven to 350 and bake for 10-15 until brown and cheese is melted
