Pump seems to have decent specs . . . but is it "big" enough to run a 3" dredge? 3200 GPH, 82' of headlift, suction lift is 13', and 1 1/2" ins & outs.
If not, what pump specs should I go with for a 3" dredge?

And what's the biggest dredge this pump can operate?

no I would recommend at least a 5hp to get what you need and run at idle for the gph

So what's the largest nozzle that this 2.5 horse pump will operate? 1.5"? 2"?

would do well on a 1.5". maybe a 2". I'm not too familiar with that pump. Have you already bought it? If not you may want to read all the threads in dredge forum find the smart bench and ask them what they recommend.

really for that pump I wouldn't go beyond 2" and it's going to work at that running full throttle and going to have some patience

That's using a semi-trash pump and I would use it for anything larger than a 1.5" dredge.

Depending on what kind and how your dredge is set up, a 3" is going to need around 10k gph.

Honda GXH 50 with proline pump is a 2 hp motor and runs a two inch proline smooooooth
throw that trash pump away
