It's a crayfish. In the south they are sometimes called "crawdad". In large quantities they get steamed or boiled like crabs and taste great. The generally skitter under rocks and you don't see them too often out of the water. Yours has had too much sugar!

Call them crayfish or crawdads in Louisiana and they will laugh you out of the State! Crawfish!!!
 

Some teenage girls call them 'EEEEEEEEKKKKKKKKKK!".
 

I call them crawfish, or food...Nice teeth ya found.
