I am about to trade two knives, a 1950's case, and 1970's commerative boker for rolls of wheat cents. Based on my own knowledge and research, I value the two knives at around $70. The previous rolls I got from thus gentlman had of course been picked thru, no key dates, but a great mix of dates. All the cents ranged from 1910- 1945. In your opinions, how many rolls should I try to get?

Typically a roll like that sells for about 7 bucks

Then IMHO you are overpaying! I can normally pick up assorted date rolls for $2.50 to at the most $3.50 a roll but I am sure that the prices vary from one area to another and of course, I have a Business License. Now, if a roll is solid teens or teens and 20's, I expect to pay more and usually have to pay $5.00 to $10.00 a roll and even more if a roll has some 1909-P, 1909- VDB's and 1910 Cents. I also expect to get an assortment of "D" Denver minted and a few "S" San Francisco minted Cents with most of my purchases.

There was a great assortment of mint marks as well as dates, honestly can't say enough good things about the two I got off him in the past, Just wanna make sure I don't go into the next trade with to high or low of expecations.
