Here's a recipe that I got from my Dad that's different from your standard Meat Loaf as it uses ground chuck and ground pork. I find it very tasty.
Meat Loaf Ambrosia
1 1/2 Pounds Ground chuck
1 Pound Pork sausage, Ground
2 Egg
1 Teaspoon Salt
1 Teaspoon Pepper
1 Onion, Chopped fine
1 1/2 Cups Oatmeal
1 Cup Milk, skim
1/3 Cup Ketchup
1 Teaspoon Worcestershire sauce
1. Preheat oven to 350 degrees.
2. Mix all ingredients in a large bowl until thouroughly mixed.
3. Shape into loaves ( I make 4 small loaves), place in pan, and bake for 30 minutes.
Servings: 12
Yield: 4 Loaves
Preparation Time: 15 minutes
Start to finish: 45 minutes
Notes: Pre-heat oven to 350 degrees.
If shaped into 4 small loaves, the remaining three can be wrapped and frozen. When ready to use, allow the loaf to thaw to room temperature and bake as directed.
