With the availability of checks, credit cards, direct deposit and etc., there is no demand for $500 bills worthy of gearing up the presses. Besides, having $500 bills in circulation would promote counterfeiting and robberies.

Easier to launder the proceeds of crime (drug money)
It's the very reason they took the $1000 bill off the market in Canada in 2000.
Now if one is used the serial # is recorded with ones information. (but that a whole topic not discussed on the open)
As of 2021 they were deemed "No longer considered legal tender"
As are the $1, $2, $25, $500 notes.

In 2002, the EU decided to introduce notes valued at 500 euros (=$529). Although no longer issued, they remain among the highest value legal tender notes for any country. They’re very difficult to spend and most establishments refuse them. Even though they have a whole host of security features including holograms, watermarks, security threads, UV inks, raised printing and microprinting, they’re still heavily counterfeited and treated with great suspicion. Even banks treat them with suspicion because they quickly became a favourite for money-laundering, drug-dealing and other illicit purposes in the criminal fraternity. Those were the main reasons the EU stopped printing them in 2019.
 

I don’t care about the criminal element. They will get their money whether it’s hundreds or five hundreds. Here’s some cartel money found in Mex. $2.6 mil.
