Now all I need to do is to find a blacksmith to buy my nails! I'm pretty sure the really old ones are iron, not steel.

I know that the only part of the cobblestone street that is removed is when the subsurface structural / utilities are installed. Electrical, plumbing, communications, etc, and major transportation services like below surface train systems. (Subways).
Other than that, they are paved over with 3 inches of blacktop. Usually, the trolley / streetcar rails are left in place and paved over also.
