Paczki Day

In Poland, they are eaten especially on Fat Thursday (the last Thursday before Lent). Many Polish Americans celebrate Paczki Day on Fat Tuesday (the day before Ash Wednesday). Traditionally, the reason for making pączki was to use up all the lard, sugar, eggs and fruit in the house, which are forbidden during Lent.

In the large Polish community of Chicago, and other large cities across the Midwest, Paczki Day is also celebrated annually by immigrants and locals alike. In Buffalo, Cleveland, Detroit, Hamtramck, Windsor, Milwaukee,Pulaski and South Bend, Paczki Day is more commonly celebrated on Fat Tuesday instead of Fat Thursday.

PACZKI (Polish Doughnuts)

STEP 1 - Making the sponge:
1 c. lukewarm milk
1 c. sifted flour
2 pkgs. dry yeast
1 tbsp. sugar
2 tbsp. warm water

Dissolve the yeast in warm water and add sugar. Add the yeast mixture to the milk and flour. Cover. Let rise until double in bulk.

STEP 2 - Making the dough:
5 eggs
1 c. confectioners' sugar
1 tsp. vanilla
1/4 lb. soft butter
1 tsp. rum extract
1 tsp. orange rind
1 1/2 tbsp. salt
6 c. flour, sifted

Take 5 eggs and add confectioners' sugar. Beat well until lemon colored. Combine with the sponge and mix well. Add 1 teaspoon vanilla, rum and orange rind. Then add salt and butter and mix well.
Add sifted flour gradually to the above mixture and knead dough until it comes away from your hand. Cover, set aside in warm place and let rise until double.

Flour a board lightly. Divide the dough into 3 parts. Pat dough until 1/2 inch thick. Cut doughnuts with cutter or inverted glass. Let rise until double.


STEP 3 - Frying the paczki:

Heat the oil to 350 degrees, drop doughnuts into hot oil and fry on one side until golden and puffy, then turn on the other and continue to fry until other side is golden. Remove and place on paper towels to drain. Roll lightly in granulated sugar or glaze with icing. Makes 2 dozen.
Paczki can be frozen up to 3 months. To serve, place in brown paper bag, sprinkle with water and place in warm oven until the doughnuts are hot - about 20 minutes.

The paczki can be filled with jelly; a pastry tube is used after the doughnuts are fried.
 

Wifey sold about a million on Sunday. Geez, yuck! Just throw everything your not keeping through lent into a bowl, mix it and cook it.

lol a million?! Yikes...sounds like a lot of work! They look pretty tasty but after making that many they probably would lose their appeal! :wink:
 

I wish I could send everyone a paczki. I had one earlier along with MOST of South Bend IN

Mine was filled w/ strawberry and cream :thumbsup:

The next interesting holiday we celebrate in a big way here is Dyngus day! the day after easter! No donuts...hard boiled eggs, sauage and beer :hello2:

She works a bakery and they do a banner business on cannoli also, yuck! Give me a twinkie anyday!

I think I would like Dyngus day too! Now you got me craving this paczki AND sausage! lol

That does it....when Teresa gets up I am sending her for donuts and blame you guys! lol
 

Next time you're up around these parts the Mrs. will mix up a batch. She also does a lot of other Italian pastries these days, so bring Nick P.

And don't forget the twinkies.
