Maybe just the name of the owners OR it could mean GOLD & SILVER MINE !

You are correct - grist & saw mill.

Sometimes you'll also see M.M. - merchant mill. These were typically bigger than saw or grist mills and they ground and packaged grain for shipping (not local use).
