2 (6 oz.) pkgs. dried peaches
1/2 c. sugar
2 tbsp. fresh lemon juice
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
Egg pastry

Cook peaches according to package direction. Drain and mash. Combine with sugar, lemon juice and spice. Roll out pastry. Cut into 5 inch rounds. Place 3 tablespoons of peaches filling on half each round. Moisten edges with water, fold in half, press together with fork to seal. In skillet, fry pies in 1 inch of hot oil, at 375 degrees, until golden brown on each side, turning only once. Drain well on paper towels. Makes 1 1/2 dozen pies
EASY EGG PASTRY
Mix a double batch in a medium mixing bowl, apple seal and store in refrigerator. 1/4 tsp. salt 2/3 c. lard or shortening 1 egg 1/4 c. water 1 tsp. vinegar
Place flour and salt in small mixing bowl. Apply cover and shake to blend. Cut lard or shortening into flour mixture until it resembles small peas. Combine egg, water and vinegar. Make a well in the center of flour mixture, pour in egg mixture. Apply seal, shake vigorously until mixture forms a ball. Divide dough in half.
On pastry sheet with rolling pin roll one half into size you need ....can be used for regular pie or fried pies
