Calico Bean Soup and Cornbread

CALICO BEAN SOUP

1 pkg. bean mix (2 c.)
1 qt. water
1 qt. tomatoes
2 bay leaves
1 tsp. vinegar or juice of 1/2 lemon
2 to 4 ham hocks
2 onions, finely chop
2 cloves of garlic, chop
1 stalk celery, finely chop
1 tsp. chili powder
1 Cup finely shredded carrots
1 lb bacon fried crisp and crumbled
Wash beans thoroughly, cover with water and let soak overnight. In the morning, drain. Add water and ham hocks. Simmer 2 1/2 to 3 hours. Add remaining ingredients. Simmer another 1/2 to 1 hour. Correct seasoning. Bone meat and discard fat and bones. Garnish with Tobasco Sauce and Bacon crumbles.

CORNBREAD

2 cups of self-rising cornmeal
2 eggs beaten
2 cups buttermilk
2 Tablespoons bacon drippings, melted, or veg. oil

Heat oven to 450 degrees. Grease your 9-inch skillet with about 2 tablespoon of shortening or oil (Use bacon drippings instead if available). Leave oil in bottom of pan... Place pan in oven to heat ....
Combine cornmeal, 2 eggs, buttermilk, and the melted bacon drippings. Mix well. I find a whisk does this nicely. Pour into hot skillet. Batter will sizzle.
Bake at 450 degrees for 35 minutes or until golden brown. Serves 6 to 8
Hint: Sprinkle a little cornmeal in the hot pan before adding the batter. It will brown and add a crispier texture.
If using plain cornmeal, add 2 teaspoons of
baking powder and 1/2 teaspoon of salt for each cup of regular meal

Slather with butter and yum yum
 

Never have heard of a Calico bean....Is this a type of bean or a mixture of beans.?....I think what makes this recipe is the ham hocks.....Gypsy would you pleae make this recipe for me?....Steve
 

I will make it ,if you debone the hamhock....I hate that part....LOL

lima beans, small
great northern beans
white beans, small
lentils
black-eyed peas
pinto beans
garbanzo beans
navy beans
black turtle beans
 

I believe if you look in the dried bean section of the grocery, you can probably find a single bag that is very similar to the beans Gypsy listed; there may be a slight variation. But, since it appears you may have talked Gypsy into making the mix up for you, guess my bit of info is immaterial now ::)
