Cajun Eggs

1 dozen hard boiled eggs.
1 can diced tomatoes
3 onioons chopped fine
3 green peppers chopped
1/2 cup diced small celery
1 Tablespoon butter
1 teaspooon flour
paprika
cheese ....grated

In small sauce pan melt butter,stir in flour,onions salt and pepper to taste. Add tomatoes ,heat thoroughly . Place eggs in buttered baking dish. Cover with hot tomatoe mixture. Sprinkle well with grated cheese. Brown lightly in oven. Paprika when done.

You may not have checked but I had asked if you put the eggs in whole or slice them?

Also, I thought this might be a nice low-fat (but high-cholesterol - not a problem) meal by adding some day-old bread chunks or croutons and some diced jalepenos.

What ya' think?

BTW...I'm gonna make your cheese crescents today and attempt to make them low surgar/low fat (See reply)

We have sliced the eggs in half....but leaving them whole is ok too...just dont overcook or do in microwave because eggs will pop...just lightly brown them
