Bread & Butter Pickles

I know it's kind of early to be making pickles, but with this winter weather lately I'm just looking forward to the gardening season. I was packing up some boxes and found my recipe that I thought I had lost two years ago. My family will be happy, they love these and most of the time I have to hide a few jars just so I can have some.

4 quarts sliced medium cucumbers
4 medium white onions chopped
2 medium green peppers chopped
1/3 cup coarse canning salt
5 cups white sugar
1-1/2 teaspoons turmeric
1-1/2 teaspoons celery seed
2 Tablespoons mustard seed
3 cups cider vinegar

Put cucumbers, onions and peppers in pot and add salt.
Cover with cracked ice - mix thoroughly, several times
Let stand 3 hours.
Drain off all liquid.
Combine remaining ingredients and pour over cucumbers and heat just to a boil.
Put in jars, take a narrow thin spatula or butter knife and go around the inside of the jar to get all air bubbles out. Clean rim and seal jar with lid.

I process jars in hot boiling water bath for 15 minutes.

Guaranteed one of the best you'll find.....the family just loves them.
