3 large zuccini halfed length wise
1 tbsp water
1 tbsp olive oil
2 pounds homemade meat sauce or 1 jar of ragu rich and meaty meat sauce
8oz mafalade or laagnia or other long wavy pasta cooked and drained
1 c shreadded mozzarella cheese
scoop pulp of the zuccinni. set aside. in an 11X7 inch microwave safe baking dish arange zuccini halves. add water to dish cover with plastic wrap and nuke on high for 5 min or until tender/ set aside
chop zuccini pulp and then in a ten inch nonstick skillet heat olive oil on med. heat and cook zuccini pulp stirring occasionally 5 min or until golden. stir in meat sauce and simmer 3 min.
to serve arrange hot pasta on a blue plate. arrange zuccini boats on the pasta cut side up then fill each boat with sauce mixture . sprinkle boats with cheese and serve immediately. decorate if desired with home made sails!!
