Bluezman's Blasphemous Yankee Corn Muffins​

It was a little cold this morning

Thought I'd make some corn muffins to go with my coffee.

Gonna be a good day today.JPG


Ingredients

1 cup unbleached all purpose flour
1 cup cornmeal (I use stone ground)
1/3 cup sugar
1/3 cup powdered milk
3 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon ground anise seed (aprox.measure)
* raisins (optional)
1/2 cup of corn oil
1/4 cup honey (I like wildflower)
2 XL eggs
1/3 cup milk
1 teaspoon vanilla extract

* if you remember to soak 'em in bourbon the night before.


In a bowl, mix well all dry ingredients.
In a seperate bowl wisk wet ingredients into an emultion.
Add the emultion to the dry mix and wisk together.
Evenly distruibte into a greased, large, 12 muffin pan.
Bake at 375 degrees for l5-20 minutes.
Use toothpick to test for doneness.

I know, I know...southern corn bread and corn muffins doesn't have any sugar or honey.
......but since I've named my receipe "Yankee Corn Muffins" I get to put whatever I want in.

These are great with coffee for breakfast or a cup of tea.

As you can see there are no raisins in my muffins......but they were still outstanding! The ground anise seed comes through like a hint of almond. The outside has that slight cookie crispness to it, and the inside texture is light and airy but not dry. Sweet but not overly so for breakfast. I would not use this receipe for corn bread, though. It would not be good to have with chile, etc. This is one of my better receipes. Enjoy

Thank's Nick, The stove is new ...but I've been getting up cold in the mornings. I may have to return to useing my old All Nighter stove. If I do ...then the Hearthstone will be for sale.

I guess im just easy to hook Charlie...your muffins did sound good.
Well the only muffin recipe i could share with ya is Martha White,
and she comes in a package. Just add milk and 1 egg.
Not near as good as yours im sure!

Trish, I have to let you off the hook, 'cause before I retired I, myself used Jiffy Mix. It's only in the last 3 yrs. or so that I've had the time to experiment with foods...(like a mad scientist). Stuff like this keeps me busy. Tomorrow I bake bread. By Friday I'll be on a diet again. Thanks for the nibble. Charlie
