I had an urge for something a little different that could be thought of as a "summer salad". I had a recipe for Cuban Black Bean Soup and I juggled some things around and came up with this tasty and different salad;
Here's the recipe:
Servings: 8
Preparation Time: 30 minutes
Start to finish: 30 minutes
Notes: Adapted from a recipe for Cuban Black Beans.
I was in the mood for something cool and tasy on a hot summer day and came up with this recipe.
You nay wish ti drain and rinse the beans.

1 Can Black beans
1 Medium Onion, Finely chopped
1 Medium Tomato, Fresh, diced
1 Teaspoon Salt
1 Teaspoon Vinegar
1 Teaspoon Balsamic vinegar
1/8 Teaspoon Oregano
1/8 Teaspoon Cumin
4 Tablespoons Olive oil
1 Green pepper, Finely chopped
1 Red pepper, Finely chopped
2 Cloves Garlic, Minced
1 Dash Pepper
1 Teaspoon Sugar

1. Heat olive oil and slightly saute garlic, red and green peppers and onion;add oregano, cumin, salt, sugar, and pepper, stirring well. (Cook until the ingredients just begin to soften then remove from heat).
2. In a bowl, place beans, cooked mixture, tomatos, and vinegars and stir well; refrigerate.
3. Serve chilled.
