Whats on the menu tonight?

Tamales.

A friend of mine is from Mexico. Every couple of months, he takes orders and his family makes a couple of hundred tamales.
$15.00 a dozen. They come wrapped in foil and in a paper bag. My order had my name on the bag and a "Q"
Ahhhhhhh...Queso! (cheese) and jalapeño!! A dozen chicken tamales also. Sour cream and Tapatío is a must. Sweat develops on the back of my neck...:laughing7:
How can something so simple be so good?:icon_thumright:
I'm only having one right now....could not wait till dinner time!

Jumbo (sold as "colossal") shrimp on the barbie!! Huge 1&1/2 lbs were nine shrimps marinated for 4-5 hours. Marinade was juice of six fresh limes, one bottle Stella Artois beer, tablespoon tamari soy sauce, tablespoon Pickapeppa sauce, couple pinches of taragon, finely diced fresh onion, I guess a quarter cup, TSP Thai chili sauce, and a TSP Cholula chipotle sauce or maybe a little less. Oh yeah, a few pinches of garlic powder. Sounds kinda funny but it works really well on shrimp, and I use basically the same for marinade for veal or filet mignon shish-kebabs. Last two pics you can see the onion and taragon since I baste them with the marinade after turning them over.
 

Chicken Enchilada Casserole.
Cream of chicken, cream of mushroom, diced onions, diced green green chilies, boiled chicken, broth reserved.
Layered tortillas, with cheese and baked.

Pork shoulder roast in the crock pot.....For 8 hours with the usual suspects.

Today I go to my friends house to pick up a dozen tamales. He and his wife make a couple hundred ans sell them. Authentic as they are from Mexico. As I leave for home his wife hands me a plate full of food! As I'am holding the plate Jamie (pronounced high-me) adds meat from the grill, covers the plate in foil and I head home. Excellent!! The upper right of the pic... I don't know what it even is.....
I will ask him later. Everything made from scratch.
